Every Lao person eats sticky rice daily. It's our main diet and no Lao person should eat Lao foods without it. In Lao word we call it 'Khao Neow' (sticky rice) or it's also called 'sweet rice' by some people.
I'm not a good cook when it comes to Lao foods. The only thing I know best is to cook Lao sticky rice.
Based on my own experience, I would like to share my Lao sticky rice cooking method to every sticky rice lover.
For 1 serving: you'll need 'Huat' (steaming bamboo basket), a steam pot, water (7 cups) and of course sticky rice (3 cups).
Method: Soak stick rice about 6 hours in cold water or about 2 hours in hot water. Rinse rice in a colander until the water runs clear. Drain well, then pour into a bamboo cone shaped basket. Pour water in the steamer and boil it.
Next put the rice basket into the steamer pot. Steam in high heat for 20-30 minutes or until the rice becomes tender and translucent. Then fluff up the rice all over to make sure the rice is cooked thoroughly. Let it cook for another 5-10 minutes more.
Remove the steaming basket and fluff rice with spatula. Transfer it to 'Tip Khao' (Rice bamboo container). Serve hot and eat with hands by rolling it up in small or big ball and dip into any of your favorite Lao dishes.
